Tusk was focused on two goals – first, to give people well-made bread that is easily digestible and nutritionally enriching. Second, to use their bakery as a means to support the work of farmers and producers in Lebanon. The fruit, vegetables, eggs, sweeteners, dairy, meat, seeds and grains are sourced locally and they hope to encourage farmers to grow ancient, ‘peasant’ varieties of wheat by guaranteeing them a market for their harvest.
